How to Cook Sprats

Ingredients:

- 1 pound sprats, fresh or frozen

- 1/4 cup all-purpose flour

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper

- 1 tablespoon vegetable oil

Instructions:

1. If the sprats are frozen, thaw them in the refrigerator overnight or in a bowl of cold water for about an hour.

2. Rinse the sprats under cold water and pat them dry with paper towels.

3. In a large bowl, combine the flour, salt, and pepper.

4. Dredge the sprats in the flour mixture, shaking off any excess.

5. Heat the oil in a large skillet over medium heat.

6. Add the sprats and cook for 3-4 minutes per side, or until they are golden brown and cooked through.

7. Serve the sprats immediately with lemon wedges and tartar sauce.

Tips:

- To make sure the sprats are cooked evenly, cook them in a single layer in the skillet.

- If you don't have a large skillet, you can cook the sprats in batches.

- Sprats are a delicious and versatile fish that can be enjoyed in many different ways. They are great fried, baked, grilled, or smoked.
