How to Melt Chocolate Chips for Buckeyes

### To melt chocolate chips for making buckeyes, you can use either the stovetop or the microwave.

Stovetop Method:

1. Prepare a double boiler: Fill a saucepan with 2-3 inches of water and bring it to a simmer over medium heat.

2. Place the chocolate chips in a heat-resistant bowl: Make sure the bottom of the bowl doesn’t touch the simmering water.

3. Melt the chocolate: Gently stir the chocolate chips as they melt, making sure not to overheat the chocolate as this can cause it to seize and become grainy.

4. Remove from heat once fully melted: Once the chocolate is smooth and creamy, remove the bowl from the double boiler and set it aside to cool slightly.

Microwave Method:

1. Place the chocolate chips in a microwave-safe bowl: Make sure the bowl is large enough so the chocolate doesn’t splatter.

2. Microwave in 30-second intervals: Start by microwaving the chocolate on high for 30 seconds, then stir the chocolate. Continue to heat and stir the chocolate in 30-second intervals until it is completely melted and smooth.

3. Be cautious not to overheat: Overheating chocolate in the microwave can cause it to seize and become grainy. If you notice the chocolate starting to separate or become grainy, immediately stop microwaving and let it cool down before trying to melt it again.

Tips:

- Once melted, the chocolate can be used to make buckeyes or it can be stored for later use. To store the melted chocolate, transfer it to an airtight container and refrigerate it. The melted chocolate can be reheated in the microwave in short bursts of 10-15 seconds until melted.

- If the melted chocolate becomes too thick to work with, you can thin it out by adding a little bit of vegetable oil or butter and stirring it until smooth.

- If the melted chocolate becomes too cool and starts to harden, you can gently reheat it in the microwave or the double boiler until it is smooth again.
