### Sliced Baby Potatoes

Ingredients:

- 1 pound baby potatoes, scrubbed and sliced into 1/4-inch rounds

- 2 tablespoons olive oil

- 1 teaspoon dried oregano

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper

Instructions:

1. Preheat oven to 425 degrees F (220 degrees C).

2. In a large bowl, combine the baby potatoes, olive oil, oregano, salt, and pepper. Toss to coat.

3. Spread the potatoes in a single layer on a baking sheet.

4. Bake for 20-25 minutes, or until the potatoes are tender and browned.

5. Serve immediately.

Tips:

- To make sure the potatoes are cooked evenly, flip them over halfway through baking.

- If you want the potatoes to be extra crispy, bake them for a few minutes longer.

- You can also add other seasonings to the potatoes, such as garlic powder, onion powder, or paprika.

- Sliced baby potatoes are a great side dish for any meal. They are especially delicious with roasted chicken or fish.
