Ingredients:

- 1 cup raw almonds

- 3 cups filtered water

- 1/4 teaspoon vanilla extract (optional)

- A pinch of salt (optional)

- A sweetener of your choice (such as honey, maple syrup, or dates)

Instructions:

1. Soak the almonds: Place the almonds in a large bowl and cover them with filtered water. Let them soak for at least 8 hours or overnight.

2. Drain and rinse: Drain the soaked almonds and rinse them thoroughly under running water.

3. Blend the almonds and water: In a high-speed blender, combine the soaked and rinsed almonds with 3 cups of fresh filtered water. Blend on high speed until the mixture is smooth and creamy.

4. Strain the almond milk: Place a fine-mesh strainer or a nut milk bag over a large bowl. Pour the blended almond mixture through the strainer to separate the milk from the almond pulp. Squeeze the pulp to extract as much milk as possible.

5. Add flavorings (optional): At this point, you can add optional flavors to your almond milk. You can add vanilla extract, a pinch of salt, or a sweetener of your choice, such as honey, maple syrup, or dates. Blend the mixture again until the flavors are well combined.

6. Refrigerate and enjoy: Transfer the almond milk to a clean glass jar or bottle and refrigerate it. It will stay fresh for about 3-4 days. Shake well before using.

Tips:

- For a richer almond milk, use more almonds and less water.

- If you don't have a high-speed blender, you can soak the almonds for a longer period, such as 24 hours, and then blend them with a regular blender.

- You can use the leftover almond pulp to make almond meal or flour. Simply spread it out on a baking sheet and bake at 150°C (300°F) until dry, then process in a food processor.
