- 2 pounds beef eye round roast
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped carrots
- 1 (14.5 ounce) can diced tomatoes
- 1/2 cup water
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
1.) Heat olive oil in a large skillet over medium heat.
2.) Brown beef eye round roast on all sides.
3.) Place roast in a crock-pot.
4.) Add onion, celery, carrots, tomatoes, water, Worcestershire sauce, garlic powder, salt, and pepper.
5.) Cover and cook on low for 8-10 hours.
6.) Serve roast with mashed potatoes, vegetables, and your favorite sides.
- If you don't have time to brown the roast, you can skip this step.
- Add more or less water depending on your preference for gravy thickness.
- You can also add other vegetables to the crock-pot, such as potatoes, mushrooms, or corn.
