- 1 pound cooked pasta, such as penne or rotini
Instructions:
1. In a large skillet, heat the olive oil over medium heat.
2. Add the onion and cook until softened, about 5 minutes.
3. Add the garlic, zucchini, and red bell pepper and cook until the vegetables are tender, about 5 more minutes.
4. Stir in the basil, Italian seasoning, Parmesan cheese, and pine nuts.
5. Cook until the cheese is melted and the pasta is heated through, about 2 more minutes.
6. Serve immediately.
Tips:
- To save time, you can use a pre-chopped onion and garlic.
- If you don't have a skillet, you can also cook the pasta and vegetables in a large pot.
- Add some grilled chicken or tofu to the pasta for a protein boost.
- If you don't have any pine nuts on hand, you can use slivered almonds or walnuts instead.
