## Baked Eggs in Tomatoes

This is a delicious and easy way to cook eggs. It's perfect for a quick and healthy breakfast or lunch.

Ingredients:

- 4 large tomatoes

- 4 large eggs

- Salt and pepper to taste

- Olive oil

- Chopped fresh parsley (for garnish)

Instructions:

1. Preheat the oven to 375 degrees F (190 degrees C).

2. Cut the tops off the tomatoes and scoop out the pulp.

3. Season the inside of the tomatoes with salt and pepper.

4. Crack an egg into each tomato.

5. Bake for 15-20 minutes, or until the eggs are cooked to your desired doneness.

6. Drizzle with olive oil and sprinkle with chopped fresh parsley before serving.
