How to Make Tomato Sauce From Fresh Tomatoes

Ingredients:

- 5 pounds ripe tomatoes

- 1/2 cup olive oil

- 2 cloves garlic, minced

- 1/2 teaspoon dried oregano

- 1/4 teaspoon dried basil

- Salt and pepper to taste

Instructions:

1. Prepare the tomatoes. Wash the tomatoes and remove the stems. Core the tomatoes and cut them into 1-inch pieces.

2. Heat the olive oil in a large pot over medium heat. Add the garlic and cook until fragrant, about 1 minute.

3. Add the tomatoes, oregano, and basil to the pot. Bring to a boil, then reduce heat and simmer for 1 hour, or until the tomatoes have softened and broken down.

4. Use a food mill or immersion blender to puree the sauce. Season with salt and pepper to taste.

5. Serve the sauce immediately over pasta, or store in an airtight container in the refrigerator for up to 1 week or the freezer for up to 3 months.

Tips:

- For a smoother sauce, strain it through a fine-mesh sieve before serving.

- Add a splash of red wine or balsamic vinegar to the sauce for extra flavor.

- If you don't have time to make your own tomato sauce, you can use store-bought marinara sauce. Just add some fresh garlic, oregano, basil, and salt and pepper to taste.
