For the crust:
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1/2 cup (1 stick) cold butter, cut into small pieces
- 1/4 cup ice water
For the filling:
- 1/2 cup light corn syrup
- 1/4 cup packed light brown sugar
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1 large egg
- 1/4 teaspoon salt
- 1/2 cup chopped pecans
1. Preheat oven to 375 degrees F (190 degrees C).
2. In a medium bowl, whisk together the flour, sugar, and salt.
3. Add the cold butter and use a pastry cutter or your fingers to work it into the flour mixture until it resembles coarse crumbs.
4. Add the ice water and mix until the dough just comes together.
5. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
6. On a lightly floured surface, roll out the dough to a 12-inch circle.
7. Transfer the dough to a 9-inch pie plate and trim the edges.
8. In a medium bowl, whisk together the corn syrup, brown sugar, melted butter, vanilla, egg, and salt.
9. Stir in the pecans.
10. Pour the filling into the crust.
11. Bake for 25-30 minutes, or until the crust is golden brown and the filling is set.
12. Let cool for at least 1 hour before serving.
