How to Make Potato Dumplings From Leftover Mashed Potatoes

Ingredients:

- 2 cups leftover mashed potatoes

- 1/2 cup all-purpose flour

- 2 egg yolks

- 2 tablespoons chopped onion

- 1 tablespoon chopped fresh herbs (such as parsley, chives, or dill)

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper

- Vegetable oil, for greasing the baking dish

Instructions:

1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish with vegetable oil.

2. In a large bowl, combine the leftover mashed potatoes, flour, egg yolks, onion, herbs, salt, and black pepper. Mix well until all the ingredients are combined.

3. Scoop the potato mixture with a spoon or small ice cream scoop, and roll it into balls. Place the balls in the prepared baking dish.
