How to Cook Pattypan Squash

Ingredients

* 2 pattypan squash, washed and halved

* 2 tablespoons olive oil

* 1 tablespoon chopped fresh herbs (such as parsley, mint, or chives)

* Salt and pepper to taste

Instructions

1. Preheat the oven to 400 degrees Fahrenheit.

2. Drizzle the pattypan squash with olive oil and toss to coat.

3. Sprinkle with chopped herbs, salt, and pepper.

4. Roast in the preheated oven for 15-20 minutes, or until the squash is tender and golden brown.

5. Serve immediately.

* Pattypan squash can also be grilled or sautéed.
