For the turkey filling:
- 1 pound ground turkey
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 1/4 cup chopped cilantro
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
For the lettuce wraps:
- 1 head of romaine lettuce, leaves separated
- 1 cup shredded carrots
- 1 cup shredded cabbage
- 1/2 cup chopped cucumber
- 1/4 cup chopped red onion
- 1/4 cup chopped cilantro
- 1/4 cup chopped peanuts
- 1/4 cup hoisin sauce
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
1. Make the turkey filling:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion, green bell pepper, and red bell pepper and cook until softened, about 5 minutes.
3. Add the turkey, chili powder, cumin, salt, and pepper and cook until browned all the way through,
2. Assemble the lettuce wraps:
1. Lay out the lettuce leaves on a large platter.
2. Top each leaf with some of the turkey filling, carrots, cabbage, cucumber, red onion, cilantro, and peanuts.
3. Drizzle each wrap with some hoisin sauce, soy sauce, rice vinegar, and sesame oil.
4. Serve immediately.
