Ingredients:
- 4 cups (about 1.8 kg) ripe peaches, peeled, pitted, and chopped
- 2 cups (500 g) granulated sugar
- 2 tablespoons (30 ml) lemon juice
- 1 box (1.75 oz/50 g) powdered fruit pectin
Instructions:
1. Prepare the Peaches:
- Wash and peel the peaches.
- Cut them in half and remove the pits.
- Chop the peaches into small pieces.
2. Make the Jam:
- In a large saucepan, combine the chopped peaches and granulated sugar.
- Bring the mixture to a boil over medium heat, stirring constantly to prevent sticking.
- Reduce heat and simmer for 5 minutes, or until the peaches have softened.
3. Add Lemon Juice and Pectin:
- Stir in the lemon juice and powdered fruit pectin.
- Bring the mixture back to a boil, stirring constantly.
- Boil for 1 minute, or until the jam thickens.
4. Test for Doneness:
- To check if the jam is done, place a small amount on a cold plate.
- If the jam wrinkles when you gently push it with your finger, it's ready.
5. Transfer to Jars:
- Remove the jam from heat and immediately pour it into clean, sterilized jars.
- Fill the jars to within 1/4 inch (0.6 cm) of the rim.
6. Seal the Jars:
- Wipe the rims of the jars clean to remove any excess jam.
- Place the lids on the jars and screw them tightly closed.
7. Process the Jars:
- To preserve the jam, you need to process the jars in a hot water bath.
- Fill a large pot with enough water to cover the jars by 2 inches (5 cm).
- Bring the water to a simmer and place the jars in the pot.
- Cover the pot and process the jars for 10 minutes.
8. Cool the Jars:
- After processing, remove the jars from the hot water bath and let them cool completely at room temperature.
9. Check the Seals:
- Once the jars are cooled, check the seals to make sure they are airtight.
- Press the center of the lids to ensure they don't flex or pop up.
10. Store the Jam:
- Properly sealed jars of peach jam can be stored in a cool, dark place for up to 1 year.
Tips:
- To peel the peaches easily, immerse them in boiling water for 30 seconds to loosen the skin.
- You can add spices like cinnamon, cloves, or vanilla extract to enhance the flavor of the jam.
- Sterilize jars and lids by boiling them in water for 10 minutes.
- Ensure that the jars are completely sealed before storing them.
Enjoy your homemade peach jam! It makes a delicious spread for toast, pancakes, or even as a filling for pastries and desserts.
