How to Pickle Green Beans in a Crock

Pickling green beans in a crock is a traditional method of preserving them. It results in a tangy, crisp pickle that can be enjoyed for months.

Ingredients:

- 5 pounds green beans, trimmed and cleaned

- 1/2 cup pickling salt

- 1 gallon water

- 1 tablespoon mixed pickling spice

- 1/4 cup white vinegar

Instructions:

1. Wash the green beans thoroughly and trim off the ends.

2. In a large crock, dissolve the pickling salt in the water.

3. Add the green beans to the crock, making sure they are completely covered by the water.

4. Add the pickling spice and vinegar.

5. Cover the crock with a cheesecloth or paper towel and secure it with a rubber band.

6. Store the crock in a cool, dark place for at least 2 weeks before eating.

Tips:

- For a more flavorful pickle, use a combination of white vinegar and apple cider vinegar.

- You can also add other vegetables to the crock, such as carrots, onions, or peppers.

- Be sure to check the pickle regularly to make sure it is staying submerged in the water. If it is not, add more water or brine.

- Pickled green beans will keep for up to 6 months in a cool, dark place.
