* 1 pound (450 grams) shredded Swiss cheese
* 1 pound (450 grams) shredded Gruyère cheese
* 1/2 cup cornstarch
* 1 cup (240 ml) dry white wine
* 1/4 teaspoon freshly grated nutmeg
* 1/4 teaspoon dry mustard
* Salt and freshly ground black pepper
* Crusty baguette, French bread, or baby carrots, for serving
1. In a large bowl, toss the shredded cheese with the cornstarch.
2. In a heavy-bottomed saucepan or fondue pot, bring the white wine, nutmeg, dry mustard, salt, and pepper to a simmer over medium heat.
3. Gradually add the cheese mixture, a small handful at a time, stirring constantly to prevent clumping.
4. Once all of the cheese has been added, continue stirring until the fondue is smooth and creamy, about 5 minutes.
5. Keep the fondue warm over low heat, stirring occasionally.
6. Serve with crusty baguette, French bread, or baby carrots.
* For a richer fondue, add a few tablespoons of heavy cream or half-and-half.
* If you don't have a fondue pot, you can make fondue in a slow cooker. Just combine all of the ingredients in the slow cooker and cook on low until the cheese is melted and creamy.
* Fondue is a great dish for entertaining, as it can be made ahead of time and then kept warm on the stove or in a slow cooker.
