How to Preserve Pimentos

Preserving pimentos is a fun and rewarding process. Here's a step-by-step guide to help you preserve your pimentos at home:

Step 1: Gathering Supplies

- Fresh pimentos

- Canning jars with lids and bands

- Vinegar

- Sugar

- Salt

- Lemon juice

- Spices, such as cloves, cinnamon sticks, bay leaves, or cayenne pepper (optional)

- Canning pot or large saucepan

- Canning funnel

- Jar lifter

- Tongs

Step 2: Preparing Pimentos

1. Wash the pimentos thoroughly to remove any dirt or debris.

2. Cut the pimentos into strips or desired shapes.

3. Place the pimentos in a large bowl.

Step 3: Preparing the Brine

1. In a separate pot, bring vinegar, sugar, salt, lemon juice, and any desired spices to a boil over medium heat.

2. Stir the brine until the sugar and salt are completely dissolved.

3. Remove the brine from the heat and let it cool slightly.

Step 4: Canning the Pimentos

1. Place the prepared pimentos in clean canning jars.

2. Pour the cooled brine over the pimentos, leaving about ½ an inch of headspace at the top of each jar.

3. Wipe the rims of the jars with a damp cloth to remove any spills.

4. Place lids and bands on the jars.

5. Using a canning pot or large saucepan, fill the pot with water until it covers the jars by at least 1 inch.

6. Bring the water to a boil over medium-high heat.

7. Once boiling, reduce heat to medium-low and let the jars process for the recommended time, which varies based on jar size (typically around 10 minutes for pint-sized jars).

8. Remove the jars from the water with the jar lifter and let them cool completely.

Step 5: Storing Preserved Pimentos

- Allow the pimentos to cool completely before moving them to a cool, dark place like a pantry or cupboard.

- Properly canned and sealed pimentos can be stored for up to 1 year.
