Ingredients:
* 4 medium potatoes, scrubbed and pierced with a fork
* 1/4 cup unsalted butter, melted
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* 1 cup shredded cheddar cheese
* 1/2 cup sour cream
* 2 tablespoons green onions, chopped
Instructions:
1. Preheat the toaster oven to 400 degrees Fahrenheit.
2. Place the potatoes on a baking sheet and bake for 45-60 minutes, or until they are tender.
3. Once the potatoes are cool enough to handle, cut them in half lengthwise.
4. Scoop out the flesh of the potatoes, leaving a 1/4-inch border around the skin.
5. Place the potato skins back on the baking sheet and brush them with the melted butter.
6. Sprinkle the salt and pepper over the potatoes.
7. Divide the shredded cheddar cheese among the potato skins.
8. Dollop the sour cream over the cheese.
9. Sprinkle the green onions over the sour cream.
10. Bake the potatoes in the toaster oven for 10-15 minutes, or until the cheese is melted and bubbly.

Tips:
* To check if the potatoes are done, insert a fork into the center. If the fork goes in easily, they are done.
* If you do not have a toaster oven, you can bake the potatoes in a conventional oven. Preheat the oven to 400 degrees Fahrenheit and bake the potatoes for 60-90 minutes, or until they are tender.
* You can customize the toppings on the twice-baked potatoes. Some other ideas include bacon, ham, chili, or broccoli.
