- 12 slices bread (any type)
- 3 tablespoons butter, room temperature
- 2 cups shredded cheddar cheese
- 6 eggs
- ¼ cup milk
- Salt and pepper to taste

1. Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
2. Line a baking sheet with parchment paper.
3. Spread the butter on one side of each slice of bread.
4. Sprinkle half of the shredded cheese on the unbuttered side of half the bread slices.
5. In a large bowl, whisk together the eggs, milk, salt, and pepper.
6. Pour the egg mixture evenly over the cheese on the bread slices.
7. Top with the remaining bread slices, buttered side up.
8. Optional: add cooked bacon, ham, or sausage between the bread slices.
9. Optional: add vegetables such as tomatoes, peppers, or onions between the bread slices.
10. Place the sandwiches on the prepared baking sheet and bake for 15-20 minutes, or until the eggs are set and the cheese is melted.
11. Let the sandwiches cool for a few minutes before slicing and serving.
- To make ahead, assemble the sandwiches as directed and place them in the refrigerator overnight. In the morning, bake the sandwiches according to the instructions.
- These sandwiches are perfect for freezing! To freeze, cool the sandwiches completely and then wrap them individually in plastic wrap. Place the wrapped sandwiches in a freezer bag and freeze for up to 2 months. To reheat, thaw the sandwiches overnight in the refrigerator and then microwave them on high for 30 seconds, or until heated through.
