Ingredients:
- 2 live Maine lobsters (1-1.5 pounds each)
- Cold water
- Salt
- 2 tablespoons butter
- 1 teaspoon chopped fresh parsley
- Lemon wedges
Equipment:
- Large pot with a lid
- Lobster crackers or kitchen shears
Instructions:
1. Prepare the Lobster:
- Fill a large pot with cold water and bring it to a boil over high heat.
- Add 1 tablespoon of salt to the boiling water.
2. Cook the Lobster:
- Using a spider or tongs, carefully place one lobster into the boiling water headfirst.
- Let it cook for 10-12 minutes, or until the lobster is bright red.
- Repeat this process with the second lobster.
3. Remove the Lobster from the Water:
- Using the spider or tongs, carefully remove the lobster from the water and place it on a large plate or cutting board.
- Allow the lobster to cool slightly before proceeding to the next step.
4. Serve:
- Crack the lobster's claws and legs using lobster crackers or kitchen shears.
- Place a lobster on each person's plate, alongside lemon wedges.
- Melt the butter in a small saucepan and drizzle some over each lobster.
- Sprinkle with chopped fresh parsley.
- Use the lemon wedges to squeeze fresh lemon juice over the lobster meat before eating.
Tips:
- When shopping for lobsters, choose ones that are lively and have a dark blue color.
- To check if the lobster is fully cooked, insert a sharp knife into the underside of the carapace (shell). If it goes in smoothly and comes out clean, the lobster is done.
- If you prefer, you can serve the lobster with additional sides such as drawn butter, garlic butter, or a side salad.
