Instructions:
1. Prepare the duck breast: Remove any excess fat from the duck breasts, but leave the skin intact. Score the skin in a crosshatch pattern, being careful not to cut into the meat.
2. Season the duck breast: Season the duck breast generously with salt and pepper on both sides.
3. Heat the pan: Heat the oil in a large skillet over medium-high heat.
4. Sear the duck breast: Place the duck breast skin side down in the hot skillet. Sear for 3-4 minutes, or until the skin is golden brown and crispy.
5. Flip the duck breast: Flip the duck breast over and sear for another 2-3 minutes, or until the meat is cooked to your desired doneness.
6. Serve: Remove the duck breast from the skillet and let it rest for a few minutes before slicing and serving.
