Here is a simple and delicious recipe for cooking beef round sirloin tip roast in a slow cooker.
- 2 ½ to 3 pounds beef round sirloin tip roast
- 1 tablespoon olive oil
- 1 tablespoon Worcestershire sauce
- 1 tablespoon liquid smoke
- 2 teaspoons Montreal Steak Seasoning
- ½ cup water
1. In a large resealable plastic bag, combine the olive oil, Worcestershire sauce, liquid smoke, Montreal Steak Seasoning, and water.
2. Place the beef roast in the bag and seal it, removing as much air as possible.
3. Refrigerate the roast in the marinade for at least 4 hours, or overnight.
4. Before cooking, remove the roast from the refrigerator and let it come to room temperature for about 30 minutes.
5. Place the roast and the marinade in a 5 or 6-quart slow cooker.
6. Cover the slow cooker and cook on low for 8 to 10 hours, or until the meat is tender and falls apart easily.
7. When the meat is done, remove it from the slow cooker and set aside.
8. Strain the juices from the slow cooker into a saucepan and bring them to a boil over medium heat.
9. Reduce heat to low and let simmer for 10-15 minutes, or until the juices have reduced by about half.
10. Serve the beef with the reduced juices.
Tips:
• To make the gravy thicker, add a cornstarch slurry (equal parts cornstarch and water) to the juices and bring to a boil.
• Serve the beef with your favorite sides, such as mashed potatoes, rice, or roasted vegetables.
• Leftover beef can be sliced thinly and used for sandwiches or tacos.
