Ingredients:
- 2 cups green peppercorns
- 1 quart white vinegar
- 1 cup water
- 1 tablespoon pickling salt
- 1 teaspoon sugar
Instructions:
1. In a large pot or saucepan, combine the vinegar, water, salt, and sugar. Bring to a boil over medium heat, stirring occasionally.
2. Once the mixture has come to a boil, reduce the heat to low and simmer for 5 minutes.
3. Remove the pot from the heat and add the green peppercorns. Stir gently to combine.
4. Cover the pot and let it cool completely at room temperature.
5. Once cooled, transfer the peppercorns and brine to a clean glass jar or container.
6. Seal the jar or container tightly and store it in a cool, dark place for at least 2 weeks before using.
