### Carrot Patch Strawberries

These cute little strawberries are made from carrots and are a fun and healthy way to add some whimsy to your next party or gathering. They're also a great way to get kids to eat their vegetables!

Ingredients:

* 6 large carrots

* 1/2 cup (1 stick) unsalted butter, melted

* 1/2 cup granulated sugar

* 2 tablespoons orange juice

* 1/2 teaspoon vanilla extract

* 1/4 teaspoon salt

* 6 green strawberry leaves (such as mint or parsley)

Instructions:

1. Preheat oven to 400 degrees F (200 degrees C).

2. Wash the carrots and cut off the tops.

3. Cut a small slice off of the bottom of each carrot so that it can sit flat.

4. In a large bowl, whisk together the melted butter, sugar, orange juice, vanilla extract, and salt.

5. Add the carrots to the bowl and toss to coat.

6. Spread the carrots out on a baking sheet lined with parchment paper.

7. Bake in the preheated oven for 20-25 minutes, or until the carrots are tender and slightly browned.

8. Remove the carrots from the oven and let cool for a few minutes.

9. Once the carrots have cooled, top each one with a green strawberry leaf.

10. Serve immediately.

Tips:

* To make the strawberries ahead of time, bake them according to the instructions and then let them cool completely. Store the strawberries in an airtight container in the refrigerator for up to 3 days.

* When ready to serve, top the carrots with the green leaves.

* These strawberries are also great as a cupcake topper! Just insert a toothpick into the bottom of each strawberry and then place it on top of a cupcake.

Variations:

* For a more colorful twist, use different colors of carrots, such as purple or white carrots.

* You can also add other flavors to the strawberries, such as cinnamon, nutmeg, or ginger.

* For a fun twist, try making chocolate-dipped carrot patch strawberries. Simply melt some chocolate and dip the strawberries in it.
