Ingredients:
* Fresh beets
* Water
* Ice bath
Instructions:
1. Wash the beets: Rinse the beets under cool running water to remove any dirt or debris.
2. Trim the beets: Cut off the beet greens, leaving about 1 inch of stem attached.
3. Bring a pot of water to a boil: Fill a large pot with enough water to cover the beets and bring it to a boil over medium-high heat.
4. Add the beets: Once the water is boiling, carefully add the beets to the pot. Bring the water back to a boil and cook the beets for 3-5 minutes, or until they are just tender when pierced with a fork.
5. Prepare an ice bath: While the beets are cooking, fill a large bowl with ice and cold water.
6. Remove the beets from the boiling water: Use a slotted spoon to carefully transfer the beets from the boiling water to the ice bath. Let them sit in the ice bath for a few minutes to cool completely.
7. Peel and slice the beets: Once the beets are cooled, peel them using your hands or a vegetable peeler. Then, slice the beets into 1/2-inch thick rounds or slices.
Blanched beets can be used in a variety of dishes or stored for later use.
