How to Make Broccoli Cheddar Soup

Ingredients:

* 2 tablespoons unsalted butter

* ½ medium yellow onion, finely diced

* 3 cloves garlic, minced

* 2 cups chicken broth

* 1 head of broccoli, cut into florets

* 1 cup shredded sharp cheddar cheese

* 1 cup half and half

* Salt and pepper, to taste

Instructions:

1. Melt the butter in a large pot over medium heat.

2. Add the onion and cook until softened, about 5 minutes.

3. Add the garlic and cook for 1 minute more, or until fragrant.

4. Add the chicken broth, broccoli, and bring to a boil.

5. Reduce heat to low and simmer for 10 minutes, or until the broccoli is tender.

6. Add the cheddar cheese and half and half, stirring until the cheese is melted and the soup is smooth.

7. Season with salt and pepper, to taste.

8. Serve immediately, garnished with additional shredded cheddar cheese and croutons, if desired.
