Ingredients:
1 medium spaghetti squash
Salt
Pepper
Italian seasoning
Olive oil
Parmesan cheese (Optional for serving)
Instructions:
1. Prepare the squash: Preheat the oven to 400°F (200°C). Cut the squash in half lengthwise and remove the seeds. Drizzle the cut sides with olive oil, and sprinkle with salt and pepper.
2. Roast the squash: Place the squash halves cut side down on a greased baking sheet. Roast in the preheated oven for 40-45 minutes, or until the squash is tender when pierced with a fork.
3. Shred the squash: Once the squash is roasted, remove it from the oven and let it cool slightly. Then, use a fork to scrape the flesh into spaghetti-like strands.
4. Season the squash: Transfer the shredded squash to a large bowl. Season with salt, pepper, and Italian seasoning to taste. You can also add garlic powder, onion powder, or any other desired spices.
5. Top and serve: Drizzle the squash with a little olive oil. Top with grated Parmesan cheese, if desired. Serve the spaghetti squash as a pasta substitute with your favorite sauce or toppings.
Tips:
- To save time, you can roast the spaghetti squash ahead of time and store it in the refrigerator for later use.
- If you don't have Italian seasoning, you can use a mixture of dried basil, oregano, and garlic powder.
- You can add any desired protein or vegetable toppings to your spaghetti squash pasta. Some popular options include grilled chicken, meatballs, mushrooms, tomatoes, and zucchini.
