How to Bake Eggs in Bell Peppers

Baking eggs in bell peppers is a delicious and easy way to prepare a healthy breakfast or dinner. Here's how to do it:

Ingredients:

(serves 4)

- 4 different coloured bell peppers (red, orange, yellow and green)

- 4 fresh eggs

- Salt and pepper to taste

-1/4 cup (60ml) of chopped fresh herbs, such as parsley, basil, or chives (optional)

-1 tablespoon (15ml) Olive oil

Instructions:

1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).

2. Wash and cut the bell peppers in half lengthwise, removing the seeds and ribs.

3. Place the bell pepper halves cut-side up in a baking dish.

4. Gently crack an egg into each pepper half.

5. Season the eggs with salt and pepper.

6. Add chopped fresh herbs, if desired.

7. Drizzle the olive oil over the peppers and eggs.

8. Bake in the preheated oven for about 15-20 minutes or until the egg whites are set and the yolks are still runny or cooked to your desired doneness.

9. Serve immediately.

Tips:

- For a more substantial meal, you can add meat, cheese or vegetables to the peppers.

- To avoid the egg yolk from bursting, try to crack it in to a small bowl before transferring into the pepper.

- Experiment with different types of bell peppers to create a colorful and flavorful dish.

- You can also add cheese on top the eggs just before serving.

- Serve with a side of toast or your favorite breakfast foods.
