How to Make Irish Mashed Potatoes

Ingredients:

* 5 pounds potatoes, peeled and cubed

* 1 cup (2 sticks) unsalted butter, melted

* 1 cup milk

* 1/4 cup sour cream

* 1/4 cup finely chopped fresh chives

* Salt and pepper to taste

Instructions:

1. Place the potatoes in a large pot and cover with cold water. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer until the potatoes are tender, about 15-20 minutes.

2. Drain the potatoes and return them to the pot. Add the butter, milk, sour cream, and chives, and season with salt and pepper.

3. Mash the potatoes until they are smooth and creamy. Serve immediately.

Tips:

* For a richer flavor, use heavy cream instead of milk.

* If you don't have any chives, you can use parsley instead.

* Irish mashed potatoes are a great accompaniment to roasted meats, poultry, and fish.

* Leftover mashed potatoes can be refrigerated for up to 3 days. To reheat, simply place them in a microwave-safe bowl and heat on high for 1-2 minutes, or until heated through.
