- 2 cups white rice
- 2 cups water
- 1 tablespoon olive oil
- 1 jalapeño pepper, seeded and diced
- 1/2 cup cilantro, chopped
- 1/2 cup lime juice
- 1 teaspoon salt
- 1/4 teaspoon black pepper
1.) In a rice cooker, combine the white rice, water, olive oil, and jalapeño pepper.
2.) Stir to combine.
3.) Close the lid of the rice cooker and cook the rice according to the manufacturer's instructions.
4.) Once the rice is finished cooking, fluff it with a fork.
5.) Add the cilantro, lime juice, salt, and black pepper.
6.) Stir to combine.
7.) Serve the cilantro lime rice immediately.
Tips
- If you don't have a rice cooker, you can cook the rice in a saucepan over medium heat. Just be sure to bring the water to a boil before adding the rice, then reduce the heat to low and simmer for 18 minutes, or until the rice is tender and all of the liquid has been absorbed.
- You can use any type of white rice for this recipe, but basmati or jasmine rice will give you the best results.
- If you don't like spicy food, you can omit the jalapeño pepper.
- Feel free to add other ingredients to the rice, such as diced tomatoes, black beans, or corn.
- Cilantro lime rice is a great side dish for any type of Mexican or Latin American food.
