Ingredients:
* 1 pound lump crab meat
* 1 tablespoon olive oil
* 1/4 cup chopped onion
* 1/4 cup chopped celery
* 1/4 cup chopped green bell pepper
* 1/4 cup chopped red bell pepper
* 1/4 cup chopped fresh cilantro
* 1/4 cup mayonnaise
* 1 tablespoon Dijon mustard
* 1 tablespoon lemon juice
* Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion, celery, green bell pepper, and red bell pepper and cook until softened, about 5 minutes.
3. Add the crab meat and cook until heated through, about 2 minutes.
4. Stir in the cilantro, mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
5. Serve immediately.
Tips:
* Be sure to use fresh lump crab meat for the best flavor.
* If you don't have fresh cilantro, you can use 1/2 teaspoon of dried cilantro instead.
* You can also add other vegetables to the crab meat, such as corn, peas, or carrots.
* Serve the crab meat over rice, pasta, or your favorite salad.
