How to Make Sushi Rice in a Cooker

### Ingredients

* 2 cups medium-grain white rice

* 2 1/4 cups water

* 2 tablespoons rice vinegar

* 1 tablespoon sugar

* 1/2 teaspoon salt

Instructions

1. Rinse the rice in a fine-mesh sieve under cold running water until the water runs clear.

2. Add the rice, water, rice vinegar, sugar, and salt to a rice cooker.

3. Close the lid of the rice cooker and press the "cook" button.

4. Cook the rice according to the instructions in the rice cooker manual.

5. Once the rice is cooked, let it sit for 5 minutes with the lid closed.

6. Fluff the rice with a fork and serve.

Tips

* To make sushi rice, use medium-grain white rice. Short-grain rice can also be used, but it will produce a stickier rice.

* Rinse the rice thoroughly before cooking to remove any starch that could make the rice gummy.

* Use a wooden spoon or spatula to fluff the rice to avoid breaking the grains.

* Sushi rice is best served warm, but it can also be made ahead of time and refrigerated. To reheat, place the rice in a microwave-safe bowl and microwave on high for 30 seconds at a time, stirring in between, until heated through.
