For the fajitas:
- 1 tablespoon olive oil
- 1/2 onion, sliced
- 1 bell pepper, sliced
- 1/2 cup of your favorite vegan protein (such as tofu, tempeh, or seitan)
- 1/4 cup fajita seasoning
- 1/2 cup water
For the tortillas:
- 6 corn tortillas
- 1/2 cup shredded vegan cheese
- 1/4 cup chopped tomatoes
- 1/4 cup chopped lettuce
- 1/4 cup chopped avocado
- Salsa, sour cream, and guacamole, for serving
1. Prepare the fajitas:
- In a large skillet, heat the olive oil over medium heat.
- Add the onion and bell pepper and cook until softened, about 5 minutes.
- Add the vegan protein and fajita seasoning and cook until heated through, about 5 minutes more.
- Stir in the water and bring to a boil.
- Reduce heat and simmer for 15 minutes, or until the liquid has reduced and the fajitas are thickened.
2. Prepare the tortillas:
- Heat a large skillet or griddle over medium heat.
- Brush one side of each tortilla with oil.
- Place the tortillas in the skillet, oiled-side down, and cook for 1-2 minutes, or until heated through and slightly browned.
- Flip the tortillas and cook for 1-2 minutes more.
3. Assemble the fajitas:
- Place a tortilla on a plate.
- Add some of the fajita filling, cheese, tomatoes, lettuce, and avocado.
- Drizzle with salsa, sour cream, and guacamole.
- Fold the tortilla in half or roll it up and enjoy!
