* 2 cups leftover mashed potatoes
* 1/2 cup all-purpose flour

Instructions:
1. In a large bowl, combine the leftover mashed potatoes, flour, onion, green bell pepper, egg, salt, and pepper. Mix well until all the ingredients are well combined and a dough forms.
2. Heat the vegetable oil in a large skillet over medium heat.
3. Once the oil is hot, take about 1/4 cup of the potato mixture and form it into a patty. Repeat this process with the remaining potato mixture, making as many patties as you can.
4. Place the potato patties in the skillet and cook for 2-3 minutes on each side until they are golden brown and crispy.
5. Serve the potato cakes immediately with your favorite toppings, such as sour cream, cheese, salsa, or guacamole.
