* 4 (6-ounce) skinless, boneless salmon fillets
* 1/2 cup chopped onion
* 1/2 cup chopped celery
* 1/2 cup chopped red bell pepper
* 1/4 cup chopped fresh parsley
* 1/4 cup chopped fresh basil
* 1/4 cup mayonnaise
* 1 tablespoon Dijon mustard
* 1 teaspoon salt
* 1/2 teaspoon black pepper
* 1/4 cup grated Parmesan cheese
1. Preheat oven to 400 degrees F (200 degrees C).
2. In a large bowl, combine the onion, celery, red bell pepper, parsley, basil, mayonnaise, Dijon mustard, salt, and pepper.
3. Spread the mixture evenly over the salmon fillets.
4. Place the salmon fillets in a greased baking dish.
5. Sprinkle the Parmesan cheese over the salmon fillets.
6. Bake for 15-20 minutes, or until the salmon is cooked through and the cheese is melted and golden brown.
* To ensure that the salmon is evenly cooked, use a meat thermometer. The salmon should be cooked to an internal temperature of 145 degrees F (63 degrees C).
* If you don't have a meat thermometer, you can check to see if the salmon is done by inserting a fork into the thickest part of the fillet. The salmon should flake easily when it is done.
* Serve the stuffed salmon with your favorite sides, such as roasted vegetables, rice, or mashed potatoes.
