Ingredients

For the crust:

* 1 1/2 cups all-purpose flour

* 1 teaspoon sugar

* 1/2 teaspoon salt

* 1 package active dry yeast

* 1/2 cup water, warm (about 110 degrees F)

* 2 tablespoons olive oil

For the sauce:

* 1 cup cherry tomatoes, quartered

* 1/2 cup oil-packed sun-dried tomatoes, chopped

* 1/4 cup olive oil

* 2 cloves garlic, minced

* 1 teaspoon dried oregano

* Salt and pepper to taste

For the toppings:

* 1 cup baby spinach

* 1/2 cup sliced artichoke hearts

* 1/2 cup chopped red onion

* 1/4 cup crumbled vegan feta cheese

* 1/4 cup nutritional yeast

Instructions

1. Make the crust: In a large bowl, whisk together the flour, sugar, salt, and yeast. Make a well in the center of the dry ingredients and pour in the warm water and olive oil. Stir until a dough forms.

2. Turn the dough out onto a floured surface and knead for 5-7 minutes, until smooth and elastic. Place the dough in a greased bowl and cover with plastic wrap. Let rise in a warm place for 1 hour, or until doubled in size.

3. Make the sauce: While the dough is rising, make the sauce. In a medium bowl, combine the cherry tomatoes, sun-dried tomatoes, olive oil, garlic, oregano, salt, and pepper. Stir until combined.

4. Preheat the oven: Preheat the oven to 450 degrees F.

5. Assemble the pizza: Punch down the dough and divide it in half. Roll out each half into a 12-inch circle. Place the dough on a greased baking sheet.

6. Spread the sauce over the dough, leaving a 1-inch border around the edge. Top with the spinach, artichoke hearts, red onion, vegan feta cheese, and nutritional yeast.

7. Bake the pizza for 15-20 minutes, until the crust is golden brown and the cheese is melted and bubbly.

8. Let the pizza cool for a few minutes before slicing and serving.

Tips

* To make the pizza gluten-free, use a gluten-free pizza crust mix.

* To make the pizza vegan, use vegan cheese and nutritional yeast instead of regular cheese.

* For a more flavorful pizza, use fresh herbs instead of dried herbs.

* If you don't have a rolling pin, you can use a wine bottle or even your hands to roll out the dough.
