How to Make Greek Yogurt at Home

Ingredients:

- 4 cups whole milk (fresh, not ultra-pasteurized)

- 2 tablespoons plain yogurt (with live cultures)

Equipment:

- Large pot or Dutch oven

- Thermometer

- Cheesecloth

- Strainer

- Large bowl

- Kitchen twine or rubber bands

Instructions:

1. Heat the milk: In a large pot or Dutch oven, heat the milk over medium-low heat until it reaches a temperature of 180-185°F (82-85°C). Use a thermometer to monitor the temperature and stir the milk occasionally to prevent it from scorching.

2. Cool the milk: Once the milk has reached the desired temperature, remove it from the heat and let it cool down to 115°F (46°C). This is the ideal temperature for the yogurt culture to work its magic.

3. Add the yogurt culture: Stir in the 2 tablespoons of plain yogurt with live cultures into the cooled milk. This will serve as the starter culture for your Greek yogurt. Mix it thoroughly to make sure it is evenly distributed.

4. Incubate the yogurt: Cover the pot or Dutch oven with a lid or plastic wrap and place it in a warm location. You can also place it in the oven with the light on, or in a turned-off but still-warm oven, to help maintain the ideal temperature. Let it incubate for 8-12 hours, or until the yogurt has thickened and set.

5. Strain the yogurt: After the yogurt has incubated and set, it's time to strain it to make Greek yogurt. Place a fine-mesh strainer or cheesecloth over a large bowl and pour the yogurt into it. Let it drain for several hours or overnight, until most of the whey has separated and you are left with thick, creamy Greek yogurt.

6. Refrigerate the Greek yogurt: Once the Greek yogurt has drained and reached the desired consistency, transfer it to an airtight container and refrigerate. It should keep for up to 2 weeks in the refrigerator.
