2 quarts fresh figs, ripe but firm
2 cups granulated sugar
1/2 cup lemon juice
1/4 teaspoon ground cinnamon (optional)
1/8 teaspoon ground cardamom (optional)
Instructions:
1. Wash and inspect the figs. Remove any stems or leaves. Cut the figs in half or quarters, depending on their size.
2. In a large pot or saucepan, combine the figs, sugar, and lemon juice. Bring to a boil over medium heat, stirring constantly to dissolve the sugar.
3. Reduce the heat to low and simmer for about 30 minutes, or until the figs are soft and the liquid has thickened into a jam-like consistency. Stir occasionally to prevent sticking.
4. If desired, add the cinnamon and cardamom and stir to combine.
5. Remove the pot from the heat and let cool for a few minutes.
6. Transfer the fig jam to clean glass jars or containers and seal tightly. Store in a cool, dark place for up to 6 months.
7. Enjoy your homemade fig jam on toast, crackers, or as a topping for ice cream or yogurt.
Tips:
* To sterilize the jars, wash them thoroughly in hot soapy water and rinse well. Then place them in a pot filled with boiling water for 10 minutes. Remove the jars from the water and let them cool completely.
* If you don't have fresh figs, you can also make fig jam with dried figs. Simply soak the dried figs in warm water for 30 minutes to soften them before proceeding with the recipe.
* You can adjust the sweetness of the jam by adding more or less sugar.
* Feel free to add other spices to the jam, such as ginger, allspice, or nutmeg.
