* 1/2 cup (1 stick) unsalted butter, softened
* 1/4 cup granulated sugar
* 1/2 cup packed light brown sugar
* 1 large egg
* 1 teaspoon vanilla extract
* 1 3/4 cups all-purpose flour
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 1/2 cup chopped semisweet chocolate
* 1/4 cup crushed graham crackers
* 24 chocolate-covered peanut butter eggs
1. Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg one at a time, then stir in the vanilla.
3. In a separate bowl, whisk together the flour, baking soda, and salt. Add to the wet ingredients and mix until just combined. Fold in the chocolate chips.
4. Scoop the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball with the bottom of a glass to form a cookie cup about 1 1/2 inches in diameter and 1/4 inch deep.
5. Sprinkle the graham crackers over the cookies.
6. Bake for 10-12 minutes, or until the edges of the cookies are lightly browned.
7. Let the cookies cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.
8. Once the cookies are cool, place a chocolate-covered peanut butter egg in the center of each cookie cup.
