How to Blanch and Freeze Fresh Carrots Using the Microwave

Blanching carrots is a great way to preserve them because it helps to retain their nutrients and flavor. Freezing them after blanching also helps them to last longer. Here are the steps on how to blanch and freeze carrots using the microwave:

Step 1: Wash and prepare the carrots

Wash the carrots thoroughly under cold water. Remove the tops and any blemishes.

Step 2: Cut the carrots into pieces

Cut the carrots into 1-inch pieces. If the carrots are very large, you may need to cut them into smaller pieces.

Step 3: Place the carrots in a microwave-safe dish

Place the carrot pieces in a microwave-safe dish. Add 1/2 cup of water.

Step 4: Cover the dish and microwave the carrots

Cover the dish and microwave the carrots on high for 3 minutes, or until they are tender but still crisp.

Step 5: Drain the carrots

Drain the carrots in a colander and immediately place them in an ice water bath to stop the cooking process. Let them cool for a few minutes.

Step 6: Drain the carrots again

Drain the carrots again and pat them dry.

Step 7: Pack the carrots in freezer-safe bags

Pack the blanched carrots in freezer-safe bags. Squeeze out as much air as possible from the bags.

Step 8: Label the bags and freeze the carrots

Label the bags with the date and contents, then place them in the freezer. The carrots will keep for up to 8 months in the freezer.
