How to Cook a Duck

### Ingredients

* 1 whole duck, about 4 pounds

* 1 tablespoon salt

* 1/2 teaspoon black pepper

* 1 tablespoon olive oil

* 1/2 cup water

* 1/2 cup orange juice

* 1/4 cup honey

* 1/4 teaspoon ground cinnamon

* 1/8 teaspoon ground cloves

Instructions

1. Preheat oven to 350 degrees F (175 degrees C).

2. Rinse the duck inside and out and pat dry.

3. Season the inside and outside of the duck with salt and pepper.

4. Place the duck in a roasting pan and add the water.

5. Roast the duck for 2 1/2 to 3 hours, or until the internal temperature reaches 165 degrees F (74 degrees C).

6. Baste the duck with the pan drippings every 30 minutes or so.

7. For the last 30 minutes of cooking, brush the duck with the orange juice, honey, cinnamon, and cloves.

8. Let the duck rest for 10 minutes before carving and serving.

Tips

* To make sure the duck is cooked through, insert a meat thermometer into the thickest part of the thigh. The internal temperature should reach 165 degrees F (74 degrees C).

* If the duck starts to get too brown, cover it with foil.

* Serve the duck with your favorite sides, such as mashed potatoes, roasted vegetables, or rice.
