### Ingredients

* 1 boneless loin New York strip roast (about 3 pounds)

* 1 tablespoon olive oil

* 1 teaspoon dried oregano

* 1 teaspoon dried thyme

* 1 teaspoon kosher salt

* 1/2 teaspoon freshly ground black pepper

Instructions

1. Preheat the oven to 425 degrees F (220 degrees C).

2. In a small bowl, combine the olive oil, oregano, thyme, salt, and pepper.

3. Rub the mixture all over the roast.

4. Place the roast in a roasting pan and cook for 25 minutes per pound, or until the internal temperature reaches 135 degrees F (57 degrees C) for medium-rare.

5. Let the roast rest for 10 minutes before slicing and serving.

Tips

* To ensure even cooking, use a meat thermometer to check the internal temperature of the roast.
