How to make plantain nachos

### Ingredients

* 2 ripe plantains

* 1 tablespoon vegetable oil

* 1/2 teaspoon salt

* 1/4 cup shredded cheese (cheddar, Monterey Jack, or a blend)

* 1/4 cup diced tomatoes

* 1/4 cup diced onions

* 1/4 cup sliced jalapeños

* 1/4 cup sour cream

* 1/4 cup guacamole

* Salsa, for serving

Instructions

1. Preheat the oven to 400 degrees Fahrenheit.

2. Peel the plantains and cut them into thin slices.

3. Toss the plantain slices with the vegetable oil and salt.

4. Spread the plantain slices out on a baking sheet and bake them for 15-20 minutes, or until they are crispy and browned.

5. Remove the plantain slices from the oven and top them with the shredded cheese, tomatoes, onions, jalapeños, sour cream, and guacamole.

6. Bake the nachos for an additional 5 minutes, or until the cheese is melted and bubbly.

7. Serve the nachos immediately with salsa.
