* 3 tablespoons extra virgin olive oil
* 1 1/2 tablespoons red-wine vinegar
* 1 teaspoon finely chopped shallots
* 1/4 teaspoon Dijon mustard
* Salt and pepper
* 5 cups mixed salad greens, loosely packed
* 1 cup cherry tomatoes, halved
* 1/2 cup thinly sliced red onion
* 1/4 cup crumbled goat cheese
* 1/4 cup chopped toasted almonds
1. Make the dressing. In a small bowl, combine the olive oil, vinegar, shallots, Dijon, and salt and pepper to taste. Whisk until emulsified.
2. Assemble the salad. In a large salad bowl, combine the mixed greens, tomatoes, red onion, and goat cheese. Drizzle with the dressing. Toss gently to coat the salad leaves with the dressing.
3. Top the salad with almonds and serve immediately.
