How to Make Veggie Nuggets

### Ingredients

* 1 cup cooked lentils

* 1 cup cooked rice

* 1/2 cup chopped carrots

* 1/2 cup chopped celery

* 1/2 cup chopped onion

* 1 egg

* 1/2 cup breadcrumbs

* 1/4 cup flour

* 1 teaspoon salt

* 1/2 teaspoon black pepper

* 1 tablespoon oil

Instructions

  1. In a large bowl, combine the lentils, rice, carrots, celery, onion, egg, breadcrumbs, flour, salt, and pepper. Mix until well combined.
  2. Form the mixture into 1-inch balls.
  3. Heat the oil in a large skillet over medium heat.
  4. Add the veggie nuggets and cook until browned on all sides, about 5 minutes.
  5. Serve with your favorite dipping sauce.
  6. Tips

    - For extra crispy nuggets, coat them in panko breadcrumbs instead of regular breadcrumbs.

    - You can also add other vegetables to the nuggets, such as zucchini, corn, or peas.
