How to Harvest Rosemary Sprigs

Rosemary, of the genus Rosmarinus, is a hardy perennial plant with aromatic leaves and flowers. It adds vibrancy to marinades and rubs and has medicinal uses in poultices and herbal tea. A low-maintenance herb, rosemary doesn't need a lot of attention and thrives in containers or gardens. Clip a few fresh sprigs of this herb and add it to potatoes, lamb and pork. Freshly harvested sprigs look like wide pine needles on slightly woody stems. Refrigerate unused harvested sprigs for up to a week.

      Shake the stems of the plant lightly to remove any loose or dead leaves.

      Examine the sprigs you want to cut, looking for the place where the soft stems become hard. Place your opened shears at the bottom of the soft portion.

      Clip the sprigs with your shears. Collect sprigs in your basket as you clip.
