How to Make Broccoli Cheddar Soup

Ingredients:

* 2 tablespoons unsalted butter

* ½ medium yellow onion, finely diced

* 3 cloves garlic, minced

* 2 cups broccoli florets, cut into 1-inch pieces

* 2 cups vegetable broth

* 1 cup heavy cream

* ½ cup grated sharp cheddar cheese

* ¼ teaspoon salt

* 1/8 teaspoon freshly ground black pepper

Instructions:

1. Melt the butter in a large saucepan or pot over medium heat.

2. Add the onion and sauté until soft and translucent, about 5 minutes.

3. Add the garlic and cook for 1 minute more, until fragrant.

4. Add the broccoli, vegetable broth, and salt and pepper. Bring to a boil, then reduce heat and simmer for 5-7 minutes, until the broccoli is tender.

5. Stir in the heavy cream and grated cheddar cheese. Cook until the cheese is melted and the soup is hot and bubbly.

6. Serve immediately, garnished with additional cheese and black pepper, if desired.
