For the Crust:
* 1 3/4 cups (227g) all-purpose flour
* 1/2 teaspoon (2g) salt
* 1/2 teaspoon (2g) sugar
* 1 cup (226g) unsalted butter, cold and cut into small pieces
* 1/4 cup (59ml) ice water, plus more as needed
For the Berry Filling:
* 4 cups (600g) mixed berries, such as strawberries, blueberries, raspberries, and blackberries
* 1/2 cup (100g) sugar
* 1/4 cup (29g) cornstarch
* 1 tablespoon (15ml) lemon juice
* 1 egg, beaten, for egg wash
For Star-Shaped Cookie Cutter:
* A 3-inch star-shaped cookie cutter
* A 1-inch star-shaped cookie cutter (for the center)
To Make the Crust:
1. In a large bowl, whisk together the flour, salt, and sugar.
2. Add the cold butter and use your fingers to work it into the flour mixture until it resembles coarse crumbs.
3. Add the ice water, a little at a time, until the dough just comes together.
4. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 1 hour.
To Make the Berry Filling:
1. In a large bowl, combine the berries, sugar, cornstarch, and lemon juice.
2. Toss to coat the berries. Set aside.
To Assemble the Hand Pies:
1. Preheat the oven to 400°F (200°C).
2. Line a baking sheet with parchment paper.
3. On a lightly floured surface, roll out the dough to 1/8-inch (3mm) thickness.
4. Using the 3-inch star-shaped cookie cutter, cut out as many stars as you can.
5. Transfer the stars to the prepared baking sheet.
6. Place a spoonful of berry filling in the center of each star.
7. Brush the edges of the dough with the beaten egg.
8. Fold the dough over the filling and press the edges together to seal.
9. Using the 1-inch star-shaped cookie cutter, cut out the center of each star.
10. Bake the hand pies for 15-20 minutes, until the crust is golden brown and the filling is bubbly.
11. Let the hand pies cool for at least 10 minutes before serving.
* If you don't have a star-shaped cookie cutter, you can use a regular round cookie cutter and cut out small stars with a paring knife.
* To make the hand pies ahead of time, bake them according to the instructions and then let them cool completely. Store them in an airtight container at room temperature for up to 2 days, or in the freezer for up to 2 weeks. To reheat, place them in a preheated 350°F (175°C) oven for 10-15 minutes, or until heated through.
* Serve the hand pies with whipped cream, ice cream, or your favorite sauce.
