Freezing fresh cucumbers
Cucumbers can be frozen, but they will lose some of their crispness. For best results, freeze only firm, fresh cucumbers.
* Wash cucumbers thoroughly and remove the blossom ends.
* Peel the cucumbers, if desired.
* Cut the cucumbers into slices, sticks, or cubes.
* Place the cucumber pieces on a baking sheet lined with parchment paper.
* Freeze for 2 hours, or until frozen solid.
* Transfer the frozen cucumber pieces to a freezer-safe bag or container.
* Seal the bag or container and store in the freezer for up to 1 year.
To use frozen cucumbers:
* Thaw frozen cucumbers in the refrigerator overnight or at room temperature for several hours.
* Use thawed cucumbers in salads, soups, or other dishes.
Freezing pickles
Pickles can also be frozen, but they will also lose some of their crispness. For best results, freeze only fresh, firm pickles.
* Wash the pickles thoroughly.
* Drain the pickles and pat them dry.
* Place the pickles in a freezer-safe bag or container.
* Seal the bag or container and store in the freezer for up to 6 months.
To use frozen pickles:
* Thaw frozen pickles in the refrigerator overnight or at room temperature for several hours.
* Use thawed pickles in salads, sandwiches, or other dishes.
* To prevent cucumbers and pickles from becoming freezer burned, make sure to seal them in freezer-safe bags or containers.
* Cucumbers and pickles can be frozen together or separately.
* When freezing pickles, it is not necessary to remove the seeds.
* Frozen cucumbers and pickles can be used in any dish that calls for fresh cucumbers or pickles.
