### How to Slow Cook Prime Rib

Ingredients:

- 1 (3 to 4-pound) bone-in prime rib roast, all fat removed except cap

- 3 tablespoons brown sugar

- 1 tablespoon kosher salt

- 1/2 teaspoon freshly ground black pepper

- 3 cloves garlic, minced

- 1/4 cup chopped fresh parsley leaves

Instructions:

1. Preheat the oven to 250 degrees F (120 degrees C).

2. In a small bowl, combine the brown sugar, salt, pepper, garlic, and parsley.

3. Rub the spice mixture into the prime rib, turning to coat all sides.

4. Place the prime rib in a large roasting pan.

5. Add 1/2 cup of water to the bottom of the roasting pan.

6. Cover the roasting pan with foil, tightly sealing the edges to prevent any steam from escaping.

7. Cook the prime rib in the preheated oven for 4 hours, or until the internal temperature reaches 125 degrees F (52 degrees C) for rare, 135 degrees F (57 degrees C) for medium-rare, or 145 degrees F (63 degrees C) for medium.

8. Remove the prime rib from the oven and let it rest for 15 minutes before carving and serving.

Tips:

- For a more flavorful roast, allow the prime rib to come to room temperature for 1 hour before cooking.

- If you prefer your prime rib more well-done, simply cook it for longer, checking the internal temperature every 30 minutes until it reaches your desired doneness.

- Serve the prime rib with your favorite sides, such as mashed potatoes, roasted vegetables, or a salad.

- Leftover prime rib can be used to make sandwiches, tacos, or stews.
