* 1 pound ground turkey or chicken
* 1 onion, chopped
* 2 cloves garlic, minced
* 1 (28-ounce) can diced tomatoes, undrained
* 1 (15-ounce) can black beans, rinsed and drained
* 1 (15-ounce) can corn, drained
* 1 (10-ounce) can Rotel tomatoes, undrained
* 1 tablespoon chili powder
* 1 teaspoon ground cumin
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 1/4 cup chopped fresh cilantro
1. In a large skillet over medium heat, brown the ground turkey or chicken. Drain any excess fat.
2. Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
3. Stir in the diced tomatoes, black beans, corn, Rotel tomatoes, chili powder, cumin, salt, and black pepper. Bring to a boil, then reduce heat to low and simmer for 15 minutes.
4. Pour the mixture into a slow cooker and cook on low for 6-8 hours, or until the meat is cooked through.
5. Stir in the cilantro and serve.
* To make the chili even healthier, use lean ground turkey or chicken. You can also add more vegetables, such as chopped carrots, celery, or zucchini.
* If you don't have a slow cooker, you can make this chili on the stovetop. Simply bring the mixture to a boil, then reduce heat to low and simmer for 30 minutes, or until the meat is cooked through.
* Serve the chili with your favorite toppings, such as shredded cheese, sour cream, or avocado.
